Red Pear, a new painting by S'anna

With all the pears I have been painting recently, I had quite a few in the house to eat. I thought I would share some of my favorite Pear recipes. Below is the recipe for Spicy Pear Preserves. This my neighbor Kelly's favorite preserves. I'll be making a whole lot more as soon as the pears ripen this fall. This is great on regular bread,(my favorite is freshly baked Italian) and on walnut bread. Just the smell of it cooking fills the whole house with a wonderful aroma. I hope you will enjoy!

Spicy Pear Preserves
 This preserve truly lives up to its name. The allspice
 and nutmeg create a special taste and aroma.

6 cups peeled,cored, and sliced pears
1 cup water
1 tablespoon lemon juice
1 1/2 package of powdered fruit pectin
8 cups white sugar
11/2 teaspoon ground allspice
1 1/2 teaspoon nutmeg
1/2 cup brown sugar

1. Sterilize jars in boiling water for 10 minutes. Sterilize lids in a warm water bath for 10 minutes. Allow both to simmer while preparing the preserve.
2. In a large saucepan, mix  pears, water and lemon. Cover and allow to to simmer for 10 minutes. Using a potato masher break down the pears as they simmer.
3. Stir in the white sugar and bring back to a boil, stirring for one minute. Make sure sugar is dissolved.
4. Remove from heat, stir in brown sugar,allspice and nutmeg.
5. Quickly fill jars  leaving 1/2 inch space at the top. wipe rims clean and top with the lids. Process in a hot water bath for 10 minutes. Remove jars and allow to set undisturbed for 24 hours.
6. Check to see all jars are sealed.
